Pasta alla puttanesca
 
Anyone can make this dish. Simple and delicious for whores in a hurry.
 
Prep
Chop up one whole bulb of garlic, two big handfulls each of fresh, clean basil and (need I specify flat?) parsley.  
 
Pit and chop about a cup each of good, imported black and green olives. Gaeta and calamata are great and sometimes you can get them already pitted at the grocery store.
 
Get a huge pot of water, plus a splash of olive oil, on the boil. Add 1 lb. bag of fusilli or other CURLY macaroni. (This is critical. You know why.)
 
Open your cans of whole, peeled or crushed tomatoes so they’re ready to go when you need them. Either one 54 oz. can or several smaller cans.
 
Cook
Generously coat very large frying pan with extra virgin olive oil. On medium-med. high heat smash up a can of sardines and fry for a minute. Add garlic fry for another minute or two. (Don’t toast or burn it.) Add chopped olives and fry everyone together for a couple more minutes until your kitchen smells so good you almost moan. Add tomatoes, juice and all, mix and bring to short boil. Watch and stir for a spell. Scream at your children. Tell them what no good miserable little s’fachims they are. How they ruined your body, your life, your dreams. Strain macaroni. Add three quarters of a small jar of capers, the chopped parsley and basil to the sauce and mix well. Return pasta to the big pot, add the sauce and mix everything well. Serve and eat with fresh grated romano or parmesan.
